Summer Menu Favorite: Fall-Off-the-Bone Baby Back Ribs

Low, Slow, and Worth the Wait

Smoked baby back ribs glazed in hoisin BBQ sauce with corn sesame crumble, poblano cheddar cornbread, mac and cheese, and agave-lime slawThere’s a real transformation that happens when ribs cook low and slow. It’s the same idea behind nose-to-tail cooking, a tradition built on the belief that every part of the animal, including the bone, deserves to be used well. Meat cooked right on the bone naturally carries more collagen than boneless cuts do, and hours of gentle heat break that collagen down into something rich and silky, the same collagen a lot of people are now taking in powder form, here in its original, whole-food state. It’s exactly why the meat turns so tender it barely needs a knife.

Sticky, Smoky, and Full of Flavor

Each half rack is rubbed in an Asian-inspired spice blend, slow cooked until tender, then finished on the grill and in the oven before getting basted in a sticky hoisin BBQ sauce made with gluten-free hoisin. A corn and sesame crumble goes on last, giving every piece a little crunch against all that tenderness, the kind of contrast that makes the second rib taste even better than the first.

Cornbread With a Backstory

Alongside the ribs, our cornbread starts with corn milled just down the road at Castle Valley Mill, a family-run gristmill in Bucks County, Pennsylvania that’s been stone-grinding grain the traditional way for generations. We fold in roasted poblano peppers and sharp cheddar, then serve it warm with a whipped maple butter that melts in fast enough to soak into every bite. It’s the kind of cornbread that tastes like it has a history, because it does.

The Sides That Steal the Show

Creamy mac and cheese rounds things out, comfort food done the way it deserves, made simply with heavy cream, a blend of cheeses, and a good cavatappi pasta that holds onto every bit of sauce. A gluten-free penne is available in its place upon request, so the dish can flex to the table. And on the side, an agave-lime slaw brings the brightness this plate needs, crisp cabbage tossed in a creamy, citrus-forward dressing that cuts through the richness and keeps every bite feeling balanced instead of heavy.

This is farm to table cooking at its most satisfying, ingredients sourced with intention, prepared with patience, and built to be shared. Our menu changes with the seasons because food this good deserves to be made with what’s actually fresh right now, not what’s convenient.
