Heavy, cheesy, the kind of dish you order and then need a nap after. We love that dish. We just wanted to see what happens when you build a plant-based eggplant parmesan with a lighter hand and a little more curiosity.

The Gold Standard: Panko-Crusted Eggplant

So here’s ours: eggplant sliced thick, coated in panko, and seared until it goes deep gold at the edges. Panko does something regular breadcrumbs can’t. It’s airier and flakier, more shard than crumb, so it crisps instead of going soggy under sauce. The eggplant underneath turns soft, soaking up whatever it’s sitting next to.

A House-Made Marinara Worth the Extra Step

What it’s sitting next to is a marinara we make ourselves, built around tomatoes at their ripest, garlic, and a few honest ingredients. No shortcuts. A fresh, house-made marinara has a brightness that jarred sauce just doesn’t, a little sharp, a little sweet, and it’s what keeps this dish from ever feeling heavy.

Vegan Mozzarella: The Cheese That Isn’t

Then there’s the mozzarella, and this is where it gets interesting. Ours is plant-based, built from mainly coconut and chickpea, and it melts with the same pull you want from a good mozzarella, without any dairy in the mix. It’s proof that dairy-free doesn’t have to mean less flavorful. It’s just a different starting point, and honestly, we think it holds its own.

Linguine: Something to Catch the Sauce

We serve the whole dish over linguine, because eggplant parmesan without something to catch the sauce always felt incomplete to us. The pasta soaks up the marinara, the eggplant brings the crunch, the mozzarella brings the pull, and fresh basil goes on right at the end so it stays bright and doesn’t wilt into the heat.

Basil has been showing up in Italian kitchens for centuries, and there’s a reason it never went out of style. It has a cooling, almost peppery lift that cuts right through rich tomato and melted cheese. One handful changes the whole plate.

We like building dishes around what’s actually in season rather than what’s convenient, because it usually just tastes better. That’s most of the secret, really.
