Chuka soba, literally “Chinese noodles,” is the original term for what we now call ramen, coined back in the early 1900s when the dish first made its way into Japan. Old-school shops still use the name today, not out of habit, but because it carries a certain nostalgia with it, a nod to where the noodle came from before it became a category of its own. Ours are the classic wheat-based version: firm, springy, and light enough that they never compete with what’s piled on top.
